Our “Berry” Favorite
We have a berry girl in our house, and creeping up right behind her is a little berry boy. They love berries but very specifically, strawberries. I’ve always called Ila Dawn my little Strawberry Shortcake because of it.
Every spring we head to the local farms to pick berries, and from there come all the strawberry desserts. Shortcakes, cakes, fillings, and jars of jam tucked into the freezer for later.
This jam right here is usually the base for many of our strawberry treats. Stirring a spoonful into cakes, fillings, or icing adds the sweetest punch of fresh strawberry flavor, and we love it.
This is a freezer jam, which means the berries are never cooked down. Instead, they taste just like they came straight from the field, completely different from a traditional cooked and canned jam.

Strawberry Freezer Jam Recipe
Strawberry Freezer Jam
Ingredients
- 2 cups berries
- 4 cups sugar
- 1 packet of pectin
- 3/4 cup water
- Splash of vanilla
Instructions
- In a bowl, mash 2 cups of berries until they are mostly juice with small bits of berries. This works best with thawed berries out of the freezer. Add sugar and mix. Let sit 10 minutes.
- While the berries sit, bring water and pectin to a boil and let boil for 1 minute.
- Pour the pectin mix over the top of the berries and mix for several minutes until all the sugar is dissolved. Add a splash of vanilla.
- Add to jars and pop in the fridge or freezer.
