A Pan of Lasagna and Not a Bite Left
There are some meals that are good. And then there are the ones that make everybody suddenly very interested in what time supper is.
This is that one.
I can’t slide this pan into the oven without somebody wandering through the kitchen asking how much longer. And when I pull it out, bubbling and golden and smelling like garlic and cheese, it’s every man for himself.
Thick layers of sauce, homemade ricotta, slices of fresh mozzarella or maybe a fancy provolone that melt just right… and by the time plates are scraped clean, there’s hardly even enough left to argue over.
I always say “Now I’m gonna make up a big ‘ole pan so we have leftovers!” But I bet you can guess how long that big ‘ole pan lasts.
It’s simple. It’s filling. It’s farm fresh. And every single time I make it, the pan is empty before the night is over.
If you’ve never made your own mozzarella or ricotta before, it’s simpler than you’d think. I’ll walk through it step by step.

Homemade Lasagna
Ingredients
Meat Sauce
- 2 pounds ground beef
- 2 cups (1 pint) diced tomatoes with juice
- 4 cups (1 quart) tomato sauce
- 2 tablespoons garden herbs or italian seasoning
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Cheese Mix
- 24 ounces ricotta and/or cottage cheese
- 2 eggs
Layers
- Lasagna noodles (bought or homemade)
- Sliced mozzarella or provolone cheese
Instructions
- Prep your mozzarella and ricotta if making from scratch.
- Brown beef on stovetop. Add tomatoes, tomato sauce, and seasonings to beef and let simmer several minutes up to an hour. Start preheating oven to 350.
- Combine cottage cheese or ricotta with the eggs.
- In a 9x13 pan, layer lasagna: 1/4 meat sauce, lasagna noodles, 1/3 cottage cheese mix, sliced cheese, 1/4 meat sauce, lasagna noodles, 1/3 cottage cheese mix, sliced cheese, 1/4 meat sauce, lasagna noodles, 1/3 cottage cheese mix, sliced cheese, last of meat sauce, sliced cheese.
- Bake at 350 degrees for about an hour. I do not precook my noodles regardless of store bought or homemade so sometimes I let this go another 15-20 minutes.
- Let cool for a bit before cutting in to help the pieces hold their layers and shape!
