It’s Just Not True
Have ya heard of the myth that farm fresh eggs can’t be used for boiled eggs? It is just not true! I do it every week just fine. Many grocery store eggs are not fresh, just preserved to last longer therefore they seem to be easier to boil and peel. I have had my fair share of tough boiled eggs to peel, and they do not turn out pretty, but I have consistently had easy to peel eggs, straight from the laying boxes that are from that day even.
Boiled eggs are one of the best things to have on hand in our house, but they can be frustrating to peel if they’re not cooked the right way, being fresh from our chickens. Whether it’s for a quick breakfast, a snack, or to make things like potato salad, egg salad, or deviled eggs, I keep boiled eggs on hand most of the time to use in all sorts of ways. I’ve settled into a few ways of cooking them that makes peeling much easier and gives me options.
Over time, I’ve settled into a few ways of “boiling” them that makes peeling much easier and gives me options.
Both are simple, and give me eggs that peel cleanly without much trouble. Perfect boiled eggs, everytime!

A Little Bit of Vinegar
A little bit of vinegar mixed in the water before putting onto the burner is the first little tweak to get farm fresh eggs to peel easily. If you’re like me, you always have a bottle of white vinegar for a multitude of household uses from cleaning, deoderizing and even making pickles. You’ll (Lord willing) never find me without it! So this is a super easy addition to my kitchen. Just fill the pot with water and a splash, it doesn’t have to be exact.
Starting Them Off Hot
The next thing that helps them to peel easily is to start them off hot. I used to throw the eggs in a pot, cover in water and get it going on the stove. And even this with the vinegar added, this works fine. However, if you bring the pot of water + vinegar to a boil before adding in the eggs, the results are even better. Add enough eggs to the boiling water to cover the bottom of the pot without being crowded or stacked. The temperature may go down slightly so just don’t start timing until it comes back to a boil.
Straight To An Ice Bath
Lastly, those boiling hot eggs need to be placed directly into a bowl of ice water for an ice bath right when that 12 minutes is up. This helps to separate the membrane on the inside from the shell for peeling and stops the eggs from overcooking.

Letting The Pressure Do The Work
This is the other way I like to make them, especially when I want something a little more hands-off. It’s just as simple, and it gives me consistently easy to peel eggs without having to watch the stove.
There is less of a “trick” to this as the stove top, it’s just a matter of having enough water in the bottom for the pot to come to pressure, putting eggs on the rack and setting it and forgetting it. The pressure does all of the work that the hot water and vinegar does on the stove.
Ice Bath
I still use an ice bath in this method because it just moves the process along faster, cooling the eggs down for quicker peeling and eating. It also helps with not overcooking the eggs and makes peeling easier.
Instant Pot Hard Boiled Eggs
Ingredients
- Eggs
- Water
- Ice Water
Instructions
- Place the trivet and a cup of cool water into the bottom of the Instant Pot. Add eggs in a single layer on the trivet.
- Put on the lid and make sure it is set to seal if your Instant Pot requires it manually. Set the Instant pot on high pressure for 5 minutes. If your pot will not come to pressure, be sure you have added enough water. When the Instant Pot timer goes off and the 5 minutes of cook time is over, leave the lid on and allow the pot to natural release for 5 minutes.
- After 5 minutes natural release, carefully manually release and move the eggs to an ice bath.
- Once cool enough to handle, peel those easy to peel boiled eggs and enjoy!
