An Old Fashioned Staple
Ahh, old fashioned no bake cookies. This is a family recipe that came from one of those old community cookbooks — the kind with handwritten notes, passed down through generations. My copy is marked up with tips and tweaks because I usually make a double batch, and I’ve completely perfected it for how we like them.
Now listen, no-bake fudge cookies can be a little temperamental. Around here, people are very particular about their no-bakes. They’re incredibly popular — whether it’s a bake sale, church supper, or school function, they’re always the first to go — but only if they’re made right.
The number one mistake? Overcooking them.
That’s when you get that dry, white, filmy coating on the outside, and nobody wants that. When done right, though? These cookies are fudgy, soft, rich, and absolutely the best.

Gluten Free No Bake Cookies
Ingredients
- 2 cups sugar
- 1/2 cup butter
- 1/2 cup milk
- 1/4 cup cocoa
- 1 teaspoon vanilla
- 1/4 cup peanut butter
- 3 cups gluten free old fashioned oats
Instructions
- Heat 2 cups sugar, 1/2 cup butter, 1/2 cup milk, 1/4 cup cocoa, and 1 teaspoon vanilla in a large pot on the stove top.
- While that heats, lay out parchment or wax paper to prepare to scoop the cookies on to.
- At the first few bubbles (not a rolling boil yet), set a timer for 1 minute. Do not overcook! Start the timer at the first bubbles and it should reach a boil before 1 minutes.
- Once 1 minute is up, remove from heat and add 1/4 cup peanut butter and 3 cups of oats. Stir to melt peanut butter and combine oats.
- Quickly scoop 1/8 cup (for small cookies) or 1/4 cup (for large cookies) scoops onto parchment or wax paper and allow to sit until cooled and set. n
